Smoky Crispy Crunchy Chickpeas

chips are fine. crackers are fine. but the snack I actually cannot be trusted alone with? these.
golden, smoky, crackly little chickpeas, roasted until they shatter when you bite them, with a slow cayenne warmth that sneaks up on you around the fourth handful. and there is ALWAYS a fourth handful. they're salty, they're smoky, they're crunchy, they're spicy, and they cost basically nothing because the whole thing starts with two cans of chickpeas. my favorite kind of math.
the spice situation (small drawer, big payoff)
nothing exotic here, promise: paprika, smoked paprika, granulated garlic, cayenne, salt. that's the entire lineup.
but can we briefly talk about smoked paprika? regular paprika brings the sweet peppery base, and smoked paprika is the same pepper that took a detour through a smokehouse first. that half teaspoon is doing the heaviest lifting in this recipe... it's what makes these taste like they came off a grill instead of out of your oven. if you've had that jar sitting untouched since one ambitious paella night, this is her comeback tour.
cayenne is listed as optional and I respect that, but between us: use it. half a teaspoon across two cans is a gentle hum, not a fire alarm.
the two rules of crispy
rule one: dry chickpeas only. after draining and rinsing, get them properly dry with a kitchen towel before the oil and spices go on. a little patience here pays off in serious crunch later.
rule two: do not judge them hot out of the oven. this is the part nobody tells you! at minute 35 they'll seem a little soft and you'll think you failed. you didn't. chickpeas do their final crisping as they COOL, when the last bit of steam escapes. give them 10 minutes on the tray and they go from "hm" to full crackle. walking away is the technique. you're welcome.
five ways I actually use these (besides inhaling them)
on salads, where they're basically croutons that ate their protein
on soup, especially anything creamy... the crunch on a smooth soup? come on
on hummus, yes, chickpeas on chickpeas, it's called commitment
in a snack bowl situation next to olives and almonds when people come over and you want to look effortlessly put together (you dumped things into bowls, no one needs to know)
on avocado toast when it needs a little personality
real talk on storage
here's my honest answer, because the internet lies about this: they're at their absolute crunchiest the day you make them. stored airtight on the counter, they'll soften a little by tomorrow. still delicious, just quieter. a quick 5 minute reheat in a hot oven brings the crunch right back.

Ingredients
- 2- 15 ounce cans drained and dried chickpeas
- 1 1/2 tsp kosher salt
- 2 tsp paprika
- 1/2 tsp smoked paprika
- 1 tsp granulated garlic
- 1/2 tsp cayenne
- 1/4 cup evoo
Directions
Preheat the oven to 400 degrees F.
- Drain and dry the chickpeas. Place them in a bowl and add the kosher salt, paprika, smoked paprika, granulated garlic, cayenne, and olive oil. Give a good toss. Place on a parchment lined baking tray and into the preheated oven.
- Roast for 30-40 minutes until golden and crispy. Remove from the oven and let cool to crisp up.
