Peach Cardamom Pod Crumble

Just pure perfection.

Filling
  • 6-8 peaches 
  • Pinch salt 
  • 1/4 cup granulated sugar 
  • Pinch cinnamon 
  • Pinch cardamom 
  • 1/2 lemon zested and juiced 
  • 1 tablespoon cornstarch 
Crumb topping
  • 1 1/4 cups all-purpose flour
  • 1/4 cup ground almond flour 
  • 1 cup dark brown sugar, packed 
  • 2/3 cup oats 
  • 1 1/2 sticks unsalted butter 
  • 3/4 tsp kosher salt 
  • 8 cardamom pods, crushed 
Directions
  1. Preheat the oven to 375 degrees F.
  2. Butter 9x12 baking dish and keep to the side.
  3. Make the crumb topping. Place the AP flour, ground almonds, crushed cardamom pods, brown sugar, kosher salt and oats into a bowl and toss. Add in the cubed butter and break the butter into the dough. I like to use my hands here. When the butter gets evenly combined into flour, wrap and place in fridge until you need it. 
  4. In a bowl, toss the peaches with the cornstarch, sugar, cardamom, cinnamon, lemon zest and juice and mix. Place in the baking dish and cover with the crumble. Place in the preheated oven for 40-45 minutes. Remove. Let cool for 5 min and serve with ice cream. Perfection.
