Latke
- 2 large sweet potatoes
- 1 yellow onion
- 2 eggs
- ¼ cup, plus 2 tablespoons all-purpose flour
- 1 tsp baking powder
- 1 tablespoon soy sauce
- Salt and pepper, to taste
- Avocado oil or grapeseed oil
Chive Sour Cream
- 1 cup sour cream
- ½ cup chives, freshly chopped
- ½ lemon, zested and juiced
- Kosher salt and cracked black pepper, to taste
Directions: In a bowl, add sour cream, chives, lemon juice and zest; season well with salt and black pepper. Keep in the fridge until it’s time to serve.

- Peel and grate the sweet potatoes and yellow onion. Transfer to a cheesecloth and squeeze out as much liquid as you can.
- Place grated potatoes and onions in a bowl, and add the eggs, flour, baking powder and soy sauce. Season well with salt and black pepper and mix until combined.
- Heat a frying pan with the avocado or grapeseed oil. When the oil is hot, add a large spoonful of the mixture to the pan. Fry until golden, about 3–5 minutes, then use a spatula to flip the pancake and fry on the other side.
- Remove when it’s done and place on a paper towel. Season with salt. I like to keep the finished latkes warm in a 200°F oven while I make the remaining pancakes. Serve with the Chive Sour Cream.
