Place the crumbled feta in a bowl with the ricotta, mozzarella and the egg. Mix together and season with salt and pepper.
Roll out the puff pastry and spread the filling lengthwise down the center. Cut strips on a diagonal and cross them over one another (use video for reference). Whisk egg and brush over the dough. Sprinkle on the sesame seeds and bake at 375 for 35-45 minutes until the top is golden. Serve with tomato salsa, 8 minute eggs, radishes and fennel that gets a nice drizzle of evoo and sea salt.
