Pistachio Citrus Snacking Cake

  • 1 1/3 cups ap flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp kosher salt
  • 1 cup granulated sugar
  • 1/2 cup ground pistachios, plus more for finishing
  • 1/4 cup whole milk
  • ¾ cup extra virgin olive oil
  • 2 eggs
  • ¼ cup full fat yogurt, sour cream or labneh
  • Grated zest of 1 lemon
  • Grated zest of 1 orange
  • ½ tsp vanilla 
  1. Preheat the oven to 325 degrees F.
  2. Place the ap flour, baking powder, baking soda and kosher salt in a bowl and whisk together. Place to the side.
  3. In another bowl place the sugar with the orange and lemon zest and using your hands rub together. Add in the eggs, sour cream, olive oil, vanilla, ground pistachios and whole milk and whisk together well.
  4. Add the dry into the wet and mix until combined.
  5. Pour into a buttered, cake pan that is lined with parchment paper.
  6. Place into the preheated oven and bake for 40-45 minutes. Remove and glaze and let cool. Finish with frosting and more pistachios and enjoy.

Orange glaze

  • 1 lemon juice
  • 1 orange juice
  • ¼ cup sugar

Place all the ingredients in a pan and simmer until the sugar dissolves. Keep to the side until cake is ready.

Yogurt frosting

  • ¼ cup labneh or full fat yogurt
  • 1/3 cream cheese
  • 1/3 cup whipping cream
  • ½ tsp vanilla
  • ¼ cup icing sugar
  • Pinch of salt

Place the whipping cream in a bowl and whip until soft peaks, whisk in the cream cheese, yogurt, vanilla, icing sugar and a pinch of salt. Mix and keep in the fridge until the cake is cooled.
