Lemon & Honey Roasted Chicken

Ingredients
- 4-6 chicken thighs, bone in and skin on
- 2 lbs new baby potatoes, quartered
- 1 sweet potato, sliced into 1-inch thick pieces
- 1 fennel, halved and then cut into thirds
- 1 head of garlic
- 3 shallots, sliced in half
- 1 lemon juiced
- 2 tablespoons honey
- 3 cloves of garlic, grated
- 1/3 cup evoo plus more to finish
- 1 tablespoon fennel seed, crushed
- 1 tablespoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon smoked paprika
Marinade
Directions
Preheat the oven to 425 degrees F.
Crush the spices and then add in the grated garlic, honey, lemon juice, olive oil and pour over the chicken and veg. Season generously with kosher salt and cracked black pepper and place in a preheated oven for 45 min to 1 hour- serve right off the tray.
