Cauliflower Tabouli

This is one of my favorite ways to eat cauliflower—finely chopped with an absurd amount of fresh herbs, lemon, and good olive oil.
Ingredients

1 head cauliflower, finely chopped

1 bunch fresh dill, finely chopped

½ bunch fresh parsley, finely chopped

½ bunch fresh cilantro, finely chopped

4 scallions, thinly sliced

1 lemon, juiced

½ cup extra virgin olive oil

1 tsp flaky sea salt
-
⅓ cup currants or fresh pomegranate arils (optional)

⅓ cup toasted sliced almonds or pine nuts (optional)
Directions
Quarter your cauli and then chop finely. It will fall apart naturally as you go, too, which makes it super easy. Run your knife through again if the pieces are too chunky. Then, transfer to a large bowl.
Chop up all your herbs. Add the dill, parsley, cilantro, and scallions to the bowl. Add the juice of one lemon. Add your extra virgin olive oil and flaky sea salt. Mix well and serve!
