Zucchini Babaganoush w/ Sumac and Mint

Ingredients
- 3 large zucchinis
- 1/2 cup tahini
- 1 garlic clove, grated
- 1/2 lemon, juiced
- extra virgin olive oil to finish
- 1 tsp kosher salt
- fresh mint
- pinch of sumac
Directions
Preheat your grill to medium-high heat. Dock your zucchini and place on the hot grill for 20-25 min, turning halfway through to evenly char all over. Remove from the grill and place in a bowl. Cover with a lid and let steam.
- Once cooled a bit remove the lid and drain off the extra juice.
- Mash with a whisk and then add in the tahini, garlic, and lemon juice and season well with salt. Mix it until creamy and spreadable (you can also blend in a food processor to make it extra light and creamy) Spread on a small plate and finish with a nice pinch of sumac, a glug of extra virgin olive oil, and fresh mint. Serve with fresh bread and enjoy!
