Pumpkin Chocolate Chip Everyday Cake

Ingredients
  • 2 cups all-purpose flour
  • 3/4 tsp baking soda
  • 3/4 tsp kosher salt
  • ½ tsp cinnamon
  • ¼ tsp clove
  • 1 ½ sticks melted unsalted butter, room temp 
  • 1 cup pumpkin purée 
  • ½ cup dark brown sugar, packed
  • ½ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 ½ cups chocolate chips
  • ½ cup chopped pecans or walnuts
Directions
  1. Preheat the oven to 350 degrees F. 
  2. Butter and line a cake pan.
  3. In a medium bowl, whisk together the Ap flour, baking soda, kosher salt, cinnamon, and clove and place to the side.
  4. In another bowl add the melted butter, brown sugar and granulated sugar. Whisk together until light and airy. Add in the egg, vanilla extract, and pumpkin purée. Whisk until combined. 
  5. Add the dry ingredients into the wet in two stages and once it is all almost combined, add the chocolate chips and the pecans. Mix to combine and pour into the parchment lined cake pan. Place in the oven for 25-35 minutes until a knife comes out with a little crumb from the middle.
  6. Cool and serve. Cream cheese frosting would be so good on this…just saying.
