why this leftover rice salad works
ok so this recipe was born out of a container of leftover basmati sitting in my fridge, which is genuinely the best way for a recipe to be born. I'm obsessed with the kind of cooking that starts with "what do I already have" instead of a shopping list. leftover rice is the most common thing in everyone's fridge and it has a pretty short lifespan so finding a way to use it up is always a fun challenge.
here's the thing: cold rice is better for this than fresh rice. rice that's been in the fridge overnight has dried out a little on the surface and firmed up, which is exactly what you want when it hits a hot sheet tray. fresh rice is full of steam and clumps together, so it tends to steam itself instead of toasting. this is the same reason cold rice makes better fried rice. your leftovers aren't a compromise here; they're the upgrade.
the herbs are the vegetable here. parsley, cilantro, chives, and tarragon, all finely chopped, all piled into one big bowl before the rice even shows up. the tarragon is the sleeper hit. it's the herb most people forget they're allowed to use, and it's what makes this taste different from every other herby rice bowl out there. and let the roasted rice cool before it meets them, because warm rice steams herbs into sad, wilted bits.
how much cooked rice do you need?
you want about 3 cups of cooked rice, which is roughly what 1 cup of dry basmati makes. any amount in that neighborhood works, this is a forgiving salad. if there's less in the container, that’s all good.
no leftovers? cook 1 cup of basmati with 2 cups of water for about 12 minutes, spread it out on a tray and let it cool completely before you season and roast it.
the ingredients that matter
three things carry this salad. the rice, ideally basmati, because long separate grains toast into distinct crunchy bits instead of clumping (leftover jasmine or any long grain white works too, just break up the clumps and spread it thin). the herbs, in real quantities, finely chopped, because this is the bulk of the salad and not a garnish. swap dill or mint in for the tarragon if that's what you have, you'll lose the gentle anise note, but it stays bright. and the plum, which brings juicy sweet-tart pockets that make every bite a surprise. a ripe peach, a nectarine or halved grapes do the same job, follow the season.
what to serve with it
for a more complete meal I would eat it with garlicky tahini, any kind of egg or cover with feta or halloumi. and, of course, this makes for the perfect salad to serve as a side for lunch or for dinner.
what if I don't like cilantro?
skip it and bump up the parsley by the same amount, or swap in dill or mint. the salad is built on a mix of herbs, so no single one is make-or-break. keep the total volume of herbs about the same so the balance between rice and green stays right.

3 cups cooked, cooled basmati rice (leftovers are ideal; this is what 1 cup dry rice makes)

¼ cup extra virgin olive oil

1 teaspoon kosher salt

½ teaspoon ground cumin

¼ teaspoon ground turmeric

½ cup parsley, finely chopped

½ cup cilantro, finely chopped

⅓ cup chives, finely chopped

2 tablespoons tarragon, finely chopped

½ cup toasted sliced almonds
-
1 plum, finely chopped
-
1 lemon, zested and juiced
-
2 tablespoons honey
-
¼ cup extra virgin olive oil

1 teaspoon kosher salt
for the toasted rice
for the salad and dressing
Directions
preheat the oven to 425 degrees F. pour the rice onto a sheet tray and break up the cold rice so there are no clumps.
toss the rice with the olive oil, salt, cumin and turmeric until every grain is coated.
roast for 20-25 minutes, until lightly golden on the edges. let cool completely.
finely chop the parsley, cilantro, chives and tarragon and add to a big bowl.
add the cooled rice, almonds and plum to the herbs.
add in the lemon zest and juice, honey, olive oil, and salt. toss to combine.
note: if you leave the rice in the oven too long, it will get very crunchy. a quick fix is to assemble the salad and let it sit for 5 minutes. the acid and salt with soften the rice and make it all come together.
