Heirloom Tomato Sandwich with Green Goddess Labneh

Ingredients

  • 1 large heirloom tomato
  • 1 cup labneh (or substitute with cream cheese, full-fat Greek yogurt, or mayonnaise)
  • 1 handful fresh basil leaves, plus extra for layering
  • 1 handful fresh mint leaves, plus extra for layering
  • 1 handful fresh parsley
  • 1 small handful of dill 
  • 1 small garlic clove
  • 1 bagel (or your preferred bread/vessel)
  • Salt for seasoning

Instructions

Begin by preparing your tomato - slice the heirloom tomato into thick, generous slices about 1 inch thick. Arrange the slices on a plate and season generously with salt, allowing them to sit and release their juices while you prepare the green goddess labneh.

For the green goddess labneh, combine the labneh, basil, mint, parsley, dill, and garlic in a food processor or blender. Pulse until the herbs are finely chopped, creating a vibrant green spread with fresh herbs. Taste and adjust seasoning with a pinch of salt if needed.

Toast your bagel halves until golden and crispy. Generously spread the green goddess labneh on both halves of the toasted bagel.

Layer 2 salted tomato slices on one half of the bagel, overlapping slightly if needed. Add crushed fennel seed on top of the tomato before adding fresh basil and mint leaves (just a few!)

Place the top half of the bagel with the labneh spread on top. Serve immediately while the bagel is still warm!
