Harissa-fried eggplant and halloumi wraps

Ingredients
- 6 tbsp apple cider vinegar
- Half an onion , sliced
- 1 1/2 tbsp of sugar
- 1 tsp kosher salt
- 1 tsp crushed coriander seeds
- 1 eggplant, sliced thin
- 2 cloves of garlic, finely grated
- 3 tbsp of harissa
- Juicy pinch of kosher salt
- 1 tablespoon olive oil
- 1 cup full fat Greek yogurt
- 1 small garlic clove, finely grated
- 2 Tbsps finely chopped dill, plus
- Salt to taste
- Half a lemon juiced

Directions
Quick pickled red onion
Slice the onion and place in a jar with apple cider vinegar, sugar, salt and crushed coriander seed. Mix well and set aside for at least 20 min.
Fried harissa eggplant
Season and mix. Shallow fry in neutral oil, I like refined avocado oil until golden brown.
Dill yogurt
Use large wraps to assemble. Add extra harissa for added spice!
