- 6 tbsp apple cider vinegar
- Half an onion , sliced
- 1 1/2 tbsp of sugar
- 1 tsp kosher salt
- 1 tsp crushed coriander seeds
Directions: Slice the onion and place in a jar with apple cider vinegar, sugar, salt and crushed coriander seed. Mix well and set aside for at least 20 min.
Fried harissa eggplant
- 1 eggplant, sliced thin
- 2 cloves of garlic, finely grated
- 3 tbsp of harissa
- Juicy pinch of kosher salt
- 1 tablespoon olive oil
Directions: Season and mix. Shallow fry in neutral oil, I like refined avocado oil until golden brown.
Dill yogurt
- 1 cup full fat Greek yogurt
- 1 small garlic clove, finely grated
- 2 Tbsps finely chopped dill, plus
- Salt to taste
- Half a lemon juiced
Use large wraps to assemble. Add extra harissa for added spice!
