These carrots are inspired by one of my favorite restaurants in NYC, Cafe Mogador. Mogador was the first place I ate at when I moved to NYC and is one of the only restaurants I have continued to go to since. And that says A LOT because I have a very serious case of restaurant FOMO in NYC (fear of missing out on new spots and classic establishments). Yup, Mogador is super special to me. I always get Moroccan carrots when I’m there, so of course I had to recreate them at home. They’re simple and light yet so flavorful. Eat your heart out.
ingredients
- 10 carrots, peeled and cut into even-sized pieces
- 1 tsp cumin
- 2 tbsp harissa
- 1 garlic clove, grated
- ½ lemon juiced
- 1 tsp lemon zest
- 2 tbsp olive oil
- salt to taste
1. Place carrots in a pot with 5 cups of water. Bring to a boil and let simmer, partially covered for 5 minutes. Strain water out and then place the carrots back in the pot. Add in cumin, harissa, olive oil, lemon juice, lemon zest, garlic and salt. Mix well and serve hot, warm or cold. YUMMY.
