Chocolate Olive Oil Cake with Whipped Tahini Frosting

This cake has officially converted me to a chocolate cake girl. The combination of the olive oil, cocoa, coffee, and the sour cream creates THE most moist, deeply flavored crumb, and then layered with the milk chocolate and tahini frosting...game over.
Ingredients

1 ½ cups all-purpose flour

½ cup cocoa powder, sifted

1 ½ tsp baking powder

1 tsp baking soda

1 tsp kosher salt

¾ cup granulated sugar

½ cup dark maple syrup
-
2 eggs
-
1 tsp vanilla extract
-
½ cup sour cream
-
½ cup extra virgin olive oil

¾ cup americano, room temp

1 ½ cups milk chocolate, melted

1 cup tahini paste
-
1 tsp vanilla extract
-
¼ tsp kosher salt
-
1 cup mascarpone, whipped with a whisk

Tahini Chocolate Frosting
Directions
Butter and flour a 9-inch cake tin and set to the side. Pre-heat the oven to 350 degrees F.
In a medium-sized bowl, add the all-purpose flour, sifted cocoa powder, baking powder, baking soda, and kosher salt. Whisk together and set aside.
In another bowl, add the granulated sugar, maple syrup, eggs, sour cream, extra virgin olive oil, and whisk together.
Add the dry ingredients to the wet batter, alternating with the coffee.
Once the coffee and dry ingredients are fully incorporated, pour into the buttered and floured cake tin. Tap onto the counter to release some of the bubbles.
Place into the oven and bake for 35-45 minutes until a knife comes out clean and there is no wet batter. Place on a wire rack and let cool completely
Make the frosting while the cake cools. Melt the chocolate in the microwave. Add in the tahini paste, kosher salt, and vanilla, and mix well.
Place the frosting in the fridge to set for about 30 minutes, then remove once thickened.
Once the cake is cooled, use a serrated knife to slice through the middle. Schmear half the tahini chocolate frosting on the inside of the cake, then place the top on carefully.
Whip the remaining chocolate spread with the mascarpone, then spread it on the top of the cake evenly. Slice and DEVOUR!
