Carrot Crumb Coffee Cake

If a coffee cake and a carrot cake had a baby...this would be it. The ratio of crumb topping to the cake is perfection and almost equal so get ready for some crunch. Make sure to serve it up with a hot cup of coffee and enjoy.
Ingredients

1 stick (½ cup) unsalted butter, melted 
- 
¾ cup brown sugar, packed 
- 
1 cup AP flour (if the dough feels too wet, you can add in another ¼ cup) 
- 
2 tsp ground cinnamon 
- 
½ tsp ground cardamom 
- 
pinch of salt 
- 
2 medium carrots, grated (about 1 ½ cups) 
- 
2 eggs, room temp 
- 
1 stick (½ cup) unsalted butter, melted 
- 
½ cup packed brown sugar 
- 
¼ cup maple syrup 
- 
⅓ cup full-fat yogurt 
- 
1 tsp vanilla extract 
- 
1 ⅓ cups AP flour 
- 
½ tsp cinnamon 
- 
½ tsp cardamom 
- 
½ tsp kosher salt 
- 
1 tsp baking powder 
- 
½ tsp baking soda

Directions
- Preheat your oven to 350°F and grease a 9-inch square cake pan, or line it with parchment paper. 
- Start by making the crumb topping. In a medium bowl, combine the melted butter with the brown sugar, stirring until smooth. 
- Add the flour, cinnamon, cardamom, and a pinch of salt, mixing until the mixture comes together in large, crumbly clumps. Set aside while you prepare the batter. 
- For the cake batter, grate your carrots and place them in a large bowl, add in the eggs, melted butter, brown sugar, maple syrup, yogurt, and vanilla extract and mix until smooth and well combined. 
- In a separate bowl, whisk together the flour, cinnamon, cardamom, salt, baking powder, and baking soda. Add the dry ingredients to the wet ingredients and mix gently until just combined—don't over mix. 
- Pour the batter into your prepared pan and spread it out evenly. It will be a thin layer. Don't worry. That's what we want. Take your crumb topping and break it into chunks with your hands, scattering it generously over the top of the batter, covering the entire surface. 
- Bake for about 50 minutes, or until a toothpick inserted into the center comes out clean and the crumb topping is golden brown. Let the cake cool in the pan. Slice and serve.
