Cabbage and Pine Nut Salad

Ingredients
- 1 1/2 tsp freshly grated ginger
- 2 cloves garlic, grated
- 1 tsp sesame oil
- 1 tbsp honey
- 1 tbsp plus 1/2 tsp soy sauce
- 2 tsp rice vinegar
- 1/4 cup neutral oil (such as avo oil)
- Juice of half a lemon
- 1/2 head cabbage, thinly sliced
- 1 cup toasted pine nuts (@costco!!)
- Salt, to taste

- In a mixing bowl, whisk together the grated ginger, garlic, sesame oil, honey, soy sauce, and rice vinegar with a generous pinch of salt. Slowly stream in the neutral oil while whisking until the dressing is fully emulsified. Squeeze in the lemon juice and stir to combine. Taste the dressing and adjust the seasoning as needed.
- Thinly slice the cabbage and place it in a large bowl. Pour the dressing over the cabbage and toss well to coat. Fold in the toasted pine nuts, ensuring they are evenly distributed throughout the slaw. Season with additional salt, if needed.
